I am heading to Jeff's sister's- Missy Mo's gym shortly. She is letting me use a guest pass to see if I enjoy this gym, isn't that sweet !?!
When I got back from class and before I took Jack for a walk, I had an afternoon Snack:
Greek Nonfat Blueberry Yogurt and

Chai Bumble Bar Review:
I LOVED the smell of this bar!! It smelled exactly like chai! I really enjoyed this one in comparison to the cherry chocolate and I would say it is a tie with the apricot for me- The sesame was not overpowering, and it was sweet but cinnamon like as well. It was just the right amount of crunch and chew and sweetness for me.

Lunch:
I packed my lunch in my Pink Insulated Lean Cuisine lunch bag- they were specifically designed to support Breast Cancer awareness/research. I order them online every year and they are available in september- october but they go FAST! I remember the first year they came out, I didn't get one because they ran out! this past year I ordered several and gave them as presents - half of their cost is donated to the komen foundation! They cost $9.95 ( well they did...I don't know about upcoming years) and I had free shipping! They have expanded their designs as well! Isn't it darling!?

I had an organic pear and an arnold sandwich thin filled with baby spinach, two slices of turkey and one slice of ham, and a chocolate.

Breakfast:

Smoothie ( vanilla designer whey protein, organic milk, frozen blueberries, 1/2 banana, frozen mango), I had the other half of banana with some peanut butter , some kiwi and pineapple and a piece of newman's own double fiber bread.

I WAS sooooo full.. It took me awhile to actually finish this breakfast.

* If you have noticed this yellow dish (and I have an orange one as well), they were christmas presents and are from pottery barn. I really enjoy them because they make my pictures a little more colorful on here, and they work so nicely for Jeff and I. It makes it a better surface to eat on if we eat in the living room.. and it makes it easy to carry everything in there as well. *

Update to Last Night:

I did have dessert! I made a single serving of No Pudge Brownie Mix using nonfat greek yogurt. I added some mini chocolate chips and a little peanut butter too.

Clean

Update* Body:
Run.. 36 minutes. knee still weird, not painful , weird. That is the only reason why I would still run is because its not "painful". Just strange

Lunch:

Repeat from last night because it was SO GOOD! YUM YUM YUM.
Salad, the other half of the chicken, sweet potato and apple, toasted kale with s & p. A little goddess dressing. Perfection.

The house still doesn't "look" super clean, but I swear I am exhausted from everything. It smells clean, and its much better than before. Here is a run down:

Accomplishments:

  • Got rid of about $600 + worth of clothing. Now that estimate is what it cost when I bought them.... now all of this is probably worth about $200. Not pictured is a pile I am sending to my sister, and also a big ol pile of clothes that I will see if any of my friends want. Ah... it feels so good to get rid of stuff!
    1 BLOG 002
  • Swept all the floors ( always gives me a problem with my Asthma)
  • Mopped the Kitchen, and Bathroom
  • Pledged the living room, hall, bedroom floors.
  • Did 4 loads of laundry (and counting)
  • Dusted
  • Cleaned the kitchen (counters, stove, microwave, sink)
  • Cleaned bathroom, shower, sink, toliet etc.
  • Re arranged my closet
  • Put away all my summer clothing despite yesterday's high of 63 .. and..
  • Re arranged my "room" ( our third guest bedroom is my wardrobe
dressing area and since the semester began, it just kept getting messier and messier. It feels SO nice!)
  • Gym- run 4 miles +
  • Returned DVD, I rented Fred Claus. I thought it was pretty funny but it didn't get good reviews I guess.

sigh, my feet are exhausted

I did not feel like standing up to cook anything. So I got this South Beach Living frozen pizza for one a week or two ago on sale. I think these taste pretty darn good and they have the right amount of protein for me. I used to make frozen dinners ALL the time because my brother didn't really want me cooking (:-P Matt!) ... I think he feared I would burn the apartment down... well anyway, what I enjoy about them is they are portioned , you know exact calorie count in your "entire meal" without counting/adding up etc. *Note to self post about weight loss programs**
There are definitely things I do not love about frozen dinners: sodium, added preservatives, chemicals, fat, taste, quality. I just prefer the taste, protein, and veggie contents of South Beach stuff. Anyway, I was in the mood for pizza but needed/wanted a protein rich dinner.

One of my Favorites

1 BLOG 005

1 BLOG 006

Dinner: One of my favorites! Boneless, skinless chicken breasts with whole wheat pasta, hunt's garlic and onion tomato sauce

Salad: TJ Champs Elyse, Red bell pepper, mushroom, snap peas and Goddess Dressing

I saute the chicken in the pan with some pepper, salt and a dash of parm cheese... While that cooked on low, I boiled the pasta, drained it, then tossed in the sauce into the now-empty pan.

Dessert:

No Pudge , using the single mix method- Genius!
Added in banana, peanut butter, pumpkin butter and extra nonfat greek yogurt!

Body:
4 mile run, 10 minute elliptical cool down

"ahhhh" this is me sighing because it felt fantastic!

Mind:
Paper #2 done, worked on Paper #3 due friday, lots of studying this weekend while my sister will be enjoying herself in paradise..

Soul:
Done with classes for the semester!!!
Woohoo!

Oh I wish I could be going to my sister's 30th birthday party in paradise this weekend! I could not afford the $700. Had I worked this semester as planned, I would have been just fine. Unfortunately, I could not and I know she will only turn 30 once but I can't go bankrupt for it as much as I want to!
Plus, I have finals on monday and wednesday and that would just not be easy to relax on the beach with a Pina Colada when I need to memorize metabolic pathways and research methods!

In the past seven days I have done yoga twice and run on 3 of the days. I feel FANTASTIC. Incredibly balanced. I love it!

I rented movies specifically for Jeff- "Stepbrothers" which we just finished watching after dinner & during dessert. We totally turned the lights out like a movie theater, and now its time for Rudolph the Rednosed Reindeer from 1964!

Rocky Road...

Body:
Doctor says it might not yet be a respiratory infection but I did get an icky strep test that (thank goodness) came out negative! So rest it was after buying some crucial theraflu for sore throat. As soon as I got home and took it, I fell asleep. I pretty much slept all day because I did not sleep AT ALL last night! Awful, I was up every hour ( i looked at the clock) from my throat hurting etc etc.

Mind:
I even stayed home from class... I HATE missing class but there was just no way it would be good for me to bear the cold and strain myself and making classmates sick ( esp. since there were food presentations today too)

I did do three suduko puzzles after waking up late afternoon

Soul:
I found a race next week, Thursday morning 8k around my Campus!!! How awesome is that! I loved training with my runs around campus and I was looking for a 10k to keep my spirits up since the non-race marathon a few weeks ago. I am going to try to kick this nasty bug with lots of rest and hopefully be up and going by thursday/friday of this week .. It will feel so good!

I totally called my mom - It will never go away, needing your mom's comfort when you are sick. I actually broke down on the third time I woke up last night, 1:30 am, I banged my hip on our doorknob trying to get back to bed without lights on. I crashed and just started bawling, which made me literally heave because of all my congestion and throat pain. As I was blurting unaudibly " i can't breathe I am so miserable I just want to sleep I hate this"....Jeff almost laughed at me but was seriously SO sweet, he was rubbing my hands and patting my back telling me to try not to cry because it would make it worse. He is so wonderful.

So this is the first time all day I have had any energy to do anything!
Onto eats... I did eat today and last night I made the most amazing dessert so I should start with that..

HOLY YUM! Rocky Road Brownie for Two ( B-healthy -style)
-three tablespoons no-pudge brownie mix

-2.5 tablespoons nonfat greek yogurt ( i used Oikos Organic Vanilla)
-mixed it very well

-microwaved for 2 minutes
-topped that with:
- Marshmallows
- Pistachios, Almonds, Pecans
- Flaxseed Butter

So freakin delicious! yum!

I know the marshmallows and the mix aren't incredibly healthy- but all the other ingredients are - IT WAS AWESOME!

Tuesday Breakfast:

French Toast
- two egg whites
-splash of organic 1% milk
-cinnamon
-a half teaspoon of Splenda Brown Sugar Blend
-whisk very well

-Dip slightly toasted bread into this mix, then into a hot pan ( on medium)
- While it was cooking I heated up some fruit - I could definately use the extra vitamins/minerals/antioxidant
- pineapple
-strawberries
-blueberries
-cranberries

When the french toast was done, I took it out and sliced half of a banana into the pan. Turned off the heat and let the sugars caramelize - YUM

Two dipping sauces: Chobani Strawberry Greek 0% Yogurt and Flaxseed Butter

Fantastic breakfast- I was hoping it would make it a fantastic day, but the cold won...

onto...

Lunch:
I got back from the doctor's and had...
Chicken Noodle Soup ( Healthy Choice)
added extra chicken and extra veggies!
On the side I slathered up a mini whole wheat tortilla (Trader Joe's) with hummus

Dinner:
Easy casserole + Tofu on the Side
-Annie's Mac and Cheese ( organic)
-Made as directed but used a splash of organic cream and 1/4 cup nonfat plain Chobani

- While that cooked, I defrosted broccoli in the dish

-Added sliced up "healthy style" canadian ham bacon ( it literally says it on the package "health style")
- I added the Annie's into my dish, mixed all of it really well

-Crushed four triscuits very well and spread on top

-Shook Parmesan cheese on that

-Baked for about 20 minutes on 350 ( in my toaster oven of course)

For the tofu, ( which is making its first appearance on the blog! wooohooo applause please)
I dried it out with a few paper towels, then sliced the pack in half. I left one half in the fridge for later and this half I used
Olive Oil

Pepper, Salt

Hot Pepper Sauce ( dashes of Frank's and Tabasco)

And let it saute on several of its sides.
I have to say, it was alright, but it was tofu.
Does anyone have any good recipes for tofu that do not include a "sweet" factor?

I found a bunch with maple syrup, apple cider vinegar, etc. I was trying to make it taste like buffalo chicken but it didn't do it for me. I will not give up on tofu though. ( I have actually tried several times before) ..

Ergh!

So I got to work and sat through 2.5 hours of CPR video training ( I am already first aid /CPR certified through 11/29/2008).... only to find out that the training is going until 4 pm... so the break for lunch I told them when I was scheduled to come in I was told it was going until 1 and I am already certified in CPR.. You guys copied my card!?!?!?!?

Ugh- so I have to go back in Novemeber for a different 4 hour Recertification course- I am totally putting those 2.5 hours down on my timesheet because that was a big waste of my time and NOT my fault- I told them and they copied my current certification - they should not have told me to come in ! Ergh!

Anyhow, the good news ( done with the venting-Thanks for listening)
I stopped and got Toliet Paper and i had a coupon! I also got Tava ( i had a coupon for $1.50 off) and they were both on sale! I also found.... Spooky Smores!!! Just arrived and I snagged a few...

I am snacking on one later this afternoon for sure!

Here is my lunch:
leftover acorn squash

a Flat Out Light Wrap with Short Cuts Perdue Chicken

I wanted yogurt... and I wanted something chocolate- what a perfect combo: No pudge single serving idea ( Take two tablespoons of the mix and 1 tablespoon 0% greek yogurt and mix well. Microwave for about 1 minute) I added a smidge of PB!
Yum!

I am motivated to clean right now so I am cleaning then heading to campus to get some serious coursework done!
