New Look

Hey yall! Like my new look? I found this layout using the link I found at VeggieGirl's blog.

Saturday Recap:

Gym- circuit cardio
7 minutes on the treadmill (1 mile)
7 minutes on the stepmill (oh yes I tried it again )
7 minutes on the elliptical
7 minutes on the stat bike (3.5 miles)
7 minutes treadmill (1 mile)
5 minutes cool down elliptical

It was fun, kept me excited and pumped up.

no video because we were running around until evening

We ran some shopping errands, went to the gym, then got back and Jeff made me lunch!!! It was soooo delicious too!

He made salad with organic baby greans, organic fresh cut veggies and purple cabbage and then pan cooked chicken breasts. He used hot sauce, red pepper flakes, and a little worchestire. DELCIOUS! He also gave me two pickle slices because I had wanted to eat my dad's pickle friday night. I topped mine with a little goddess dressing.


We were immediately off to his alum's football practice.

That's the head coach in the red floppy hat. They opened it to the public since they are prepping for a bowl game. His nephew, brother and stepdad met us there. It was raining and chilly and windy but it was alot of fun, especially when we all got to go on the field and talk with the players. his nephew was TRHILLED!

Dinner:
Whole wheat linguini with tomato sauce ( i used tomatoes in basil and oregano, leftover marinara, leftover sicilian sauce* and some chopped olives, a teaspoon of olive oil).

I forgot I had organic spicy bean sprouts, AND hearts of palm ( that white thing on the left, they taste like a mild artichoke) so I used them, and then all the same salad ingredients from lunch for my salad ( minus chicken).

Dinner: One of my favorites! Boneless, skinless chicken breasts with whole wheat pasta, hunt's garlic and onion tomato sauce

Salad: TJ Champs Elyse, Red bell pepper, mushroom, snap peas and Goddess Dressing

I saute the chicken in the pan with some pepper, salt and a dash of parm cheese... While that cooked on low, I boiled the pasta, drained it, then tossed in the sauce into the now-empty pan.

Dessert:

No Pudge , using the single mix method- Genius!
Added in banana, peanut butter, pumpkin butter and extra nonfat greek yogurt!

Body:
4 mile run, 10 minute elliptical cool down

"ahhhh" this is me sighing because it felt fantastic!

Mind:
Paper #2 done, worked on Paper #3 due friday, lots of studying this weekend while my sister will be enjoying herself in paradise..

Soul:
Done with classes for the semester!!!
Woohoo!

Oh I wish I could be going to my sister's 30th birthday party in paradise this weekend! I could not afford the $700. Had I worked this semester as planned, I would have been just fine. Unfortunately, I could not and I know she will only turn 30 once but I can't go bankrupt for it as much as I want to!
Plus, I have finals on monday and wednesday and that would just not be easy to relax on the beach with a Pina Colada when I need to memorize metabolic pathways and research methods!

In the past seven days I have done yoga twice and run on 3 of the days. I feel FANTASTIC. Incredibly balanced. I love it!

I rented movies specifically for Jeff- "Stepbrothers" which we just finished watching after dinner & during dessert. We totally turned the lights out like a movie theater, and now its time for Rudolph the Rednosed Reindeer from 1964!

Hot Chocolate Kind of Day

Breakfast:
Smoothie: Pineapple, Blueberry, Banana, Flaxseed Butter, Organic Milk 1% and
Miini bowl of oats ( just 1/3 cup irish cut mixed with 1/3 cup water, tsp of peanut butter, sprinkle of coconut)









Lunch:
Organic Creamy Leek and Potato Soup, BBQ Tofu Sammy ( with hummus and a tiny piece of cheese)



Dinner:
Whole wheat pasta, garlic herb tomato sauce ( a can of Hunt's and I sherry-ied it up!) and a Tilapia Filet.
I used to eat this my last year in college very often- I loved the tomato sauce and tilapia sprinkled with parmesean- so yummy!

Body:
Still resting ugh! I would love to get me some exercise of any format at this point but the cold wins, I slept literally for 12 hours from last night to this "morning" . I know I needed it but mentally I am dying to exercise~physically just not ready yet.

Mind:
I did make it to class today, we had three presentations on The American Indian- Strong Heart Study, African American Women Obesity, and CVD in non-hispanic foreign born populations...

and.. Gasp, I messed up a suduko! Man I really must be sick!
Soul:
I found this great Southern Living Magazine (The Best Ever Cakes and Pies)

from earlier this year- one of my student's mom's gave this to me during Teacher Appreciation week- I read through it dreaming of all the amazing desserts to make. I am going to share/attempt one with my mom for next week since she bought a springform pan while we shopped together "Lightened Mocha Chocolate Cheesecake" - yum! We may make more too. ( hint hint )
And.. I got this in the mail from her ( I called her to debate whether or not I should get these sheets b/c they were a really good deal)

and... I made this Hot Cocoa, while my pictures were uploading because it was so cold out today ( I took Jack outside and took my garbage can to the curb for am pickup... Brrr!)

I use a heaping teaspoon of cocoa powder, mix it with 1/2 teaspoon of Brown Sugar Splenda blend, 1 cup of 1% Organic Milk, splash of cream, and a big splash of water... mix very well, heat in the microwave for 1 1/2 -2 minutes... stir, add marshmallows, sprinkly of coconut
