Monday Lunch and Dinner Update!

Accomplishments: ( in an attempt to make me feel more positive about getting a rude response to a job.. )

  • I finally heard back from the organization I was interested in Volunteering with, turns out they would like me to help with marketing and potentially here on my blog and elsewhere in the community in addition to teaching nutrition classes!! WOOHOO-I have to read through some materials they sent but I am excited!
  • Started My Pre-Packing List (I found this Day of The Week notepad at a craft store recently. I have used it for foods/meals we have that week- but it works well for this too!)

  • Gym- Run 5 miles... toes are now hurting... I am icing as I type
  • Took out the materials I needed and started to make one of "jeff's" gifts- I have made him something each year and I knew exactly what I wanted to put together... I will take a pic for after xmas!

  • Made Toffee Chocolate Oatmeal Cookies ( post to follow)
  • Cleaned out the Fridge ( blech!!! but phew! and YAHH! at the same time.. it was gross and now its not nearly as gross.)

  • Dancing with The Stars Latin Cardio Dance DVD! (Veggie Girl is this the same one you have? ... I didn't realize until now there is more than one!)

Review of DWS, Latin Cardio:
I liked it! It wasn't a great cardio workout for me- I need to run a good 5-10 miles for that. So for beginners that are looking for a good cardio dance, I would suggest it. I really enjoyed it! I did the warm up and then all 4 of the dances and then most of the toning workout. I broke a light sweat and was actually confused a couple of times . The mutitasker in me was also baking cookies at the same time, so I had to pause, run in the kitchen, then run back and unpause and start again! I am looking forward to doing it again so that I can get some of my "dance moves" back! Get my "mojo" flowing again if you will. I haven't danced since college and I could tell I was way more rigid and fumbly than I used to be!

It was fun, kept me excited and pumped up.

He made salad with organic baby greans, organic fresh cut veggies and purple cabbage and then pan cooked chicken breasts. He used hot sauce, red pepper flakes, and a little worchestire. DELCIOUS! He also gave me two pickle slices because I had wanted to eat my dad's pickle friday night. I topped mine with a little goddess dressing.


We were immediately off to his alum's football practice.

That's the head coach in the red floppy hat. They opened it to the public since they are prepping for a bowl game. His nephew, brother and stepdad met us there. It was raining and chilly and windy but it was alot of fun, especially when we all got to go on the field and talk with the players. his nephew was TRHILLED!

Dinner:
Whole wheat linguini with tomato sauce ( i used tomatoes in basil and oregano, leftover marinara, leftover sicilian sauce* and some chopped olives, a teaspoon of olive oil).

I forgot I had organic spicy bean sprouts, AND hearts of palm ( that white thing on the left, they taste like a mild artichoke) so I used them, and then all the same salad ingredients from lunch for my salad ( minus chicken).

Pasta Bake

Pasta Bake:
Here was my ingredients:

Box of Whole Wheat Organic Pasta

2 jars TJ Marinara

1.5 cups Thawed Frozen Spinach (from TJ)

Sargento Cheese ( I did handfulls, probably about 1.5 cups total)

Butterball Turkey Sausage- It tasted more like hot dogs than sausage- not very good in my opinion but i thought I would give it a try. Yet another sausage I dislike.

I cooked the pasta according to directions, added sauce, added cheese, sliced up and added sausage. Baked at 350 for 30 minutes.

I should have taken a picture of everyone at our table! I warned them when we sat down that I take pictures because I write a blog about food and nutrition. Salad: This was a very interesting way to do a Caesar Salad. A rib of romaine, anchovy slices on top, thin strips of parm cheese, that little wafer tasted like cardboard.

Chicken on top of creamy mushroom risotto, zuchinni, steak. Last year they had a similar dish only with chicken and salmon. I mentioned everyone at our table being interested in my blog, well we had quite the discussion about this entree! My steak was medium-well. There was no pink at all. However, Melissa's was bright vibrant red, Justin's was a rose/blush, Jeff's was a mix of Melissa's and Justin's- It was incredibly odd how the same dish came to 8 people at the table but the steaks were cooked all different. Mine was so well-cooked that I could not even chew it. My chicken was very tasty, however, Michelle's chicken was very dry-

I ate the whip cream, the nuts, and that chocolate stick coming out towards you! I had a few bites ( again I like to try things) but I am not a huge fan of pudding AND I was full!

Overall Recap and Review:
I think the cheese was phenomenal and made my night! Everything was "tasty" otherwise so I hate to bring up the negative because it was "over-the-top"! It is definitely a fancy place and I love being able to attend. On top of that, to hang out with Jeff's co-workers because they are all about our age and really funny was fantastic! Last year, Jeff and a few others formed a secret band that played a great set of cover songs. They were outstanding, however, this year shortly after they began practice the drummer caught pneumonia. He had to be hospitalized and has some permanent damage but is overall fine now. Unfortunately, they couldn't do it without him. So we missed out on that but I got to spend more time with Jeff since he wasn't playing.

Initiation of the New Employees: Teams had to dress up one person like Frosty The snowman. We cheered for this guy because they were right next to our table- and one of the new employees sat with us. (They won, so they had to sing Frosty The Snowman)

Body:
Cardio: A fantastic run. A wonderful run.

I "sprinted" 4 miles. I stretched for a few seconds at each mile but jogged in between all the sprinting so no walking for this lady!

My general treadmill pace: 6.5 mph (recovery/slow jog) 7.5-7.7 mph (usual, comfortable pace) 9.3-9.8 mph (sprint)

9.8 felt super sonic- I felt like I was going to fall off the treadmill, which made it even more exciting hahaha. I didn't keep track of much else aside from running for at least 2 minutes of each mile above 9 mph... So it was mostly at a 7.5 speed, I would sprint when a good song came on during each mile at 9.3 bump it up to 9.8 then recover at a 6.5 for no more than 2 minutes... back up to a 7 + then back up to a spring etc.

My goal was to run the entire time, sprint during each mile and I met my goal.

Mind:
I turned in my paper, I only studied a little. I felt a little burnt out from the three papers due total this week. I have this weekend to study so I wanted to pace myself.

Soul:

Fantastic evening. After the holiday party we went downtown to a bar - one of our friends' birthdays- so we danced with them and had a phenomenal evening!

Dinner: One of my favorites! Boneless, skinless chicken breasts with whole wheat pasta, hunt's garlic and onion tomato sauce

Salad: TJ Champs Elyse, Red bell pepper, mushroom, snap peas and Goddess Dressing

I saute the chicken in the pan with some pepper, salt and a dash of parm cheese... While that cooked on low, I boiled the pasta, drained it, then tossed in the sauce into the now-empty pan.

Dessert:

Added in banana, peanut butter, pumpkin butter and extra nonfat greek yogurt!

Body:
4 mile run, 10 minute elliptical cool down

"ahhhh" this is me sighing because it felt fantastic!

Mind:
Paper #2 done, worked on Paper #3 due friday, lots of studying this weekend while my sister will be enjoying herself in paradise..

Soul:
Done with classes for the semester!!!
Woohoo!

Oh I wish I could be going to my sister's 30th birthday party in paradise this weekend! I could not afford the $700. Had I worked this semester as planned, I would have been just fine. Unfortunately, I could not and I know she will only turn 30 once but I can't go bankrupt for it as much as I want to!
Plus, I have finals on monday and wednesday and that would just not be easy to relax on the beach with a Pina Colada when I need to memorize metabolic pathways and research methods!

In the past seven days I have done yoga twice and run on 3 of the days. I feel FANTASTIC. Incredibly balanced. I love it!

I rented movies specifically for Jeff- "Stepbrothers" which we just finished watching after dinner & during dessert. We totally turned the lights out like a movie theater, and now its time for Rudolph the Rednosed Reindeer from 1964!

Goodbye Thursday Hello Weekend

Breakfast:

Pumpkin Pie for 1!
Oat crust, filling as usual, and organic oikos vanilla on top and a half of a banana on the side.. with flaxseed butter

Here is the explanation:

"Crust":
1/2 Cup total of Irish oats ( I mixed flaxseed cereal with it too)
Put into an Oven AND Microwave safe dish (I used this corningware dish) with
1/2 cup water ( so that the oats are soaked but not floating in water)
Microwaved for 2 minutes
Spread out oat crust to the sides of the dish so that its a flat crust like shape
Put oven-safe dish into (toaster) oven at 375 for about 5 minutes

"Filling"
Mix following ingredients into a separate bowl
1/4 cup organic pumpkin (puree not filling)
1/3 cup egg beaters- or I've used carton egg whites only or 4 egg whites
pumpkin pie spice
1 teaspoon Brown sugar
1 teaspoon of Maple Syrup (or more brown sugar)
1/2 teaspoon of Baking Powder
Microwave for 2 minutes or until slightly firm all over

Put-It All-Together:
Take out crust dish w/ oven mitt!
Spoon this slightly firm mix into the crust dish
Put back into oven for another 5-7 minutes + at 375
Topped with a spoonful of "cream" aka nonfat greek yogurt, sprinkled with cinnamon

On the side I had a half of banana with pb

Lunch: Whole Foods Salad

If you often read my blog, you can tell that I NEVER treat myself to lunch out. Mostly because I enjoy preparing my own food, secondly because I HATE to spend the money when it is so much healthier and CHEAPER to plan a tiny bit and have foods for lunch. However, being sick and being on campus until 1 pm ( and having class at 3:45) I knew it would be the best option to either stay or head to Whole Foods less than 1/4 mile from campus! So, I thought it would be a nice treat to myself to get a yummy made-my -own salad!

leftover Whole Wheat Pasta and Sauce, Half of a whole grain bun for a mini-tofu sammy, extra veggies (peppers, cauliflower), parm cheese, some chicken in there too...

Body:

I certainly DID NOT feel well enough to get in a workout after class ...ARGH! I barely had a voice and felt really tired after the interview and lunch. But I needed to stay for class. Calling the doctor in the morning for meds!

Mind:
Met April on campus at 9:30 to get equipment, then we met our freshmen interviewee for our project on College Freshmen Food Choices. The interview we conducted took about 30 minutes, then we went to the library and transcribed the interview. Apparently this takes a looonnngg time, ( it took about 1.5 hrs)


Class: we talked more about TG, but mostly cholesterol and phospholipids and went over our exam from last week. I did alright ( I got a B)... but so many people in the class did worse than the last exam and we all studied so hard. I think it was because there were SO many places to mess up, SO many enzymes for each pathway - so he gave us an extra credit opportunity to work in groups and re-do the first problem. We did great!

Soul:

It was so nice to treat myself to Whole Foods, $8 for lunch is outrageous but I never do it! I sat outside too, the sun was really warm but the air was cool.


It was also SO nice to be out of the house all day! Even though I still felt ill and was exhausted, i have been "couped up" in the house all week being a total bum on the couch! ( i needed to be but..)

After lunch i searched for articles to support my metabolism research paper and found a bunch!

Another lake trip to Nana's is in store for this weekend since she is having "thanksgiving" early, but I am un-sure if I will go mostly because I have been so sick that I haven't been able to get alot of my research done. I also would hate to bring my cold with me and get nana or any of jeff's sisters/neice/nephew sick!

It's Thursday!!! Grey's and Ugly Betty soon and I am catching up on Private Practice right now...

Hot Chocolate Kind of Day

Breakfast:
Smoothie: Pineapple, Blueberry, Banana, Flaxseed Butter, Organic Milk 1% and
Miini bowl of oats ( just 1/3 cup irish cut mixed with 1/3 cup water, tsp of peanut butter, sprinkle of coconut)









Lunch:
Organic Creamy Leek and Potato Soup, BBQ Tofu Sammy ( with hummus and a tiny piece of cheese)



Dinner:
Whole wheat pasta, garlic herb tomato sauce ( a can of Hunt's and I sherry-ied it up!) and a Tilapia Filet.
I used to eat this my last year in college very often- I loved the tomato sauce and tilapia sprinkled with parmesean- so yummy!

Body:
Still resting ugh! I would love to get me some exercise of any format at this point but the cold wins, I slept literally for 12 hours from last night to this "morning" . I know I needed it but mentally I am dying to exercise~physically just not ready yet.

Mind:
I did make it to class today, we had three presentations on The American Indian- Strong Heart Study, African American Women Obesity, and CVD in non-hispanic foreign born populations...

and.. Gasp, I messed up a suduko! Man I really must be sick!
Soul:
I found this great Southern Living Magazine (The Best Ever Cakes and Pies)

from earlier this year- one of my student's mom's gave this to me during Teacher Appreciation week- I read through it dreaming of all the amazing desserts to make. I am going to share/attempt one with my mom for next week since she bought a springform pan while we shopped together "Lightened Mocha Chocolate Cheesecake" - yum! We may make more too. ( hint hint )
And.. I got this in the mail from her ( I called her to debate whether or not I should get these sheets b/c they were a really good deal)

and... I made this Hot Cocoa, while my pictures were uploading because it was so cold out today ( I took Jack outside and took my garbage can to the curb for am pickup... Brrr!)

I use a heaping teaspoon of cocoa powder, mix it with 1/2 teaspoon of Brown Sugar Splenda blend, 1 cup of 1% Organic Milk, splash of cream, and a big splash of water... mix very well, heat in the microwave for 1 1/2 -2 minutes... stir, add marshmallows, sprinkly of coconut

Recharged!

This was a good 7+ question way to answer whether or not you should go work out if you are potentially "under the weather"

So no run today -I had the sniffles .. I have had the sniffles for the past week+ and I want them to go away! Other reasons (excuses) include I need to get some 7 mile + energy source that I can have on race day and take it with me for my next run... i.e jelly beans or goo or what have you. I think that is a big reason why I seem to stop at 7,8, 9 miles- I feel great but my brain probably stops working since its out of glucose fuel- and or my body needs a boost to keep it going.

I also have nothing appropriate to wear for race day and I need to find some stuff or at least try out what i do have to make sure it won't/will do.


Dinner:
Leftover whole wheat angel hair, sauce and Fake Steak! The fake steak is totally vegetarian. I like the way it is but it is not anywhere near the texture of filet or ribeye....


FUN dessert!
nonfat greek yogurt, mixed in one tablespoon of no pudge brownie mix and 1/4 cup fruit colored marshmallows, a teaspoon of pb, a tablespoon of coconut.... Yum! Yum! Yum!

The reasoning behind this dessert:

Nana make these amazing tasting "chocolate windows"... super easy recipe but not the healthiest ( although not bad- it requires 12 oz. Chocolate Chips, 1 Cup Peanut Butter ( i could use natural) 1/2 Cup Butter or Margarine ( I could do smart balance?) 2 Cups Miniature Marshmallows, 2 Cups Rice Krispies 12 oz. ). So I bought the marshmallows and planned on making these bad boys for christmas or something- since I had to get the whole bag I figured I would try out another recipe...

I did a "B-Healthy" version of ambrosia based from the package recipe:
1/2 banana





1 cup sour cream ( sub 1 cup nonfat greek yogurt_)





1 cup marshmallows (sub 2/3 cup)





coconut ( I used two tablespoons unsweetened)





1 cup orange sections ( didnt have any)





1 cup crushed pineapple ( I just cut up a small apple into tiny chunks)





Mix all together and chill at least 15 minutes.
So I did that minus the orange sections and pineapple... SO YUMMY!











and then realized ...

I had no pudge mix ! And knowing that I totally would eat the whole pan of brownies in two days- I avoid that by making single serving brownies- well- I thought I could do the brownie part with yogurt, then do the add ins part from the ambrosia and make it like Nana's Chocolate Windows B-Healthy style!

Sort of worked out- it was delicious- but not the same... still a great satisfying dessert! but i would not recommend anyone repeat it unless they were prepared for potential dessert-failure. It was fun trying!



So, I rested and prepared ( mentally and physically) today in hopes to get a decent run in tomorrow ( I am keeping my fingers crossed but I realize anything could happen tomorrow morning!) a fake race. It all depends on how my knee feels and how my sniffles feel too!


Body:

Yoga, Strength: Abs, Back, Biceps, Quads (BBQ) .
My triangle poses felt AMAZING today- I can totally tell a difference from even a few weeks ago!

Mind:
Class was phenomenal! 3 great article presentations on native american health and flaxseed reducing cholesterol levels in postmenapausal native american women, african american adolescent obesity intervention in chicago schools, and acculturation of hispanic and latino populations. In addition to this... I took out a book on Food and Culture and found all this great information for MY presentation in three weeks! Woohoo! I seriously LOVE this Minority Health Seminar - I would love to take this class again and do more!

Soul:
prepare yourselves, this is a long one:

If you have been reading my blog you probably know that I worked as an instructor of kids with Autism, and since starting back to school this semester and injuring my knee for marathon training- I had to stop working at the school I taught at . My afternoon student was very dear to me and was doing AMAZING before I left. Well, his mom has since asked me to work with him at home. At first she asked if I could do evening/weekend hours, which aside from my schoolwork time - those hours are not suitable for me because they are my relaxation hours, catch up with Jeff and friends, finish up projects, etc. Plus I am not as good of a teacher during those hours since I would have to go from class 4-6 then try to teach him 6-8- hello DINNER?!?
So... she found a way I could come 2.5 hours in the morning- she was pulling him out of preschool in the mornings because he was not thriving at that school ( the teachers were not 1:1 or even somewhat aware of how to teach jacob). I would get paid through this agency, so his mom could actually supplement that- We all win, right? Not exactly.

The more trainings I have had to do with this agency, the more I realize how much brain energy it takes away from studying nutrition, how much time it takes out of my schedule that I could be doing research projects or shadowing an RD or finding jobs in the field, or focusing on thesis work etc etc etc... the more I also realized how "stupid" this agency is- check the cpr incident yesterday morning...The more I work with Jacob, the worse I feel because I want him to have everything in the world, be so successful that it would be as if he never had a diagnosis at all, and I feel like it all started downhill for him when I left work and he started the new morning school.

So I have gone to his house only a few times, his mom paid me for my time ( a total of 8 hours these past two months) and I didn't accept the money she was going to give me for this past sunday. I think more so because friends don't pay you to hang out with them, and I would be starting with the agency soon enough that her $30 or whatever is more valuable to her than it was to me.

The more I have gone to his house, the more I realize how much it takes out of me to do intensive therapy with him. It is another big thing that will not be a quick 2 hours of mindless work, its difficult and stressful and I take it seriously so I give 110%.

I was feeling like this is not the situation for me to work and this is not where I want to go with my life and how do I get out now that I have started with this agency!?

Well, last night his mom asked me "Will you lie on your timesheet for us?" She wants me to lie so that her case manager, who says even though he is not recquired to be in preschool he cannot have supplemental therapy during those morning hours I can go...only during evening/weekend hours can he have extra therapy.

I don't think I can handle the lying, the plotting, the planning around visits from case managers that I would have to do and not to mention the fact that if.... IF something were to happen and the wrong person found out I lied on my hours, I would be fired for that. That will stay with me for the rest of my entire career. The chance of it happening might be small, but the consequences if anything should happen are FAR to great to mess up my entire life career.

It was as if this greater force was telling me "Wake up! You kept saying this was not going to be good, well here is the final straw- here is your way out!"

Maybe I am reading to much into this... What do you think ?

All Strung Out


  • Okay not really - I am referring to the angel hair noodles I had for dinner and how my first post of the day was "blah"... the second was "ergh"... it could only be followed by something along those lines!

    Whole Wheat Angel Hair, Rottissere (sp?) Chicken , Easiest Tomato Sauce ever ( I put in one big can of diced Fresh Market tomatoes with italian herbs, and one big jar of TJ Marinara). Yum!

    I am doing an "accomplishments" post because I need a boost and that usually tends to do it:

Accomplishments

  • Emailed Paper in to professor
  • Laundry- Mine
  • Laundry-blankets and sheets
  • Laundry- put away Jeff's cuz it was in MY way! hee hee
  • Swept all the floors
  • CPR Training/Work ( although turned out to be pointless I should still get paid)
  • Found Cliff Z-Bars in oh so festive Spooky Smores ( totally had it at the library-Yum!)
  • Finished Chapter 6 ( my portion of our group presentation)
  • Took detailed notes to transcribe to Powerpoint for Chp 6
  • Read all the Oct. and half of the Nov. Women's Health Mag.
  • Deposited Mom's check at the bank ( Thanks Mom!!!Cant wait to see you!)
  • Stopped at Andrea's and got her mail, took it up to her kitchen
  • Cooked dinner
  • Blogged! I love blog writing, its just such a great activity

Dinner for One

I love whole wheat angel hair! In my bowl of angle hair is: chicken, chickpeas, sweet peas, snow peas ( wow I guess I can't get enough of peas today) , goat cheese and parmesean cheese. Salad on the side with goddess dressing = dinner for one ( Jeff had practice for his xmas rock band)

Body:
Cardio: Biked 11 miles, 25 minutes and Elliptical 20 minutes.

Mind:
I went to campus early enough to really get in some good research and reading- I read through and took notes on 7 research articles in 2 hours! I found "the" article for my presentation and now have to find all kinds of cool interesting "obesity trend" and "food supply" research to back it up/add to it...

Soul:
My returns are made!! I had bought extra ties for Jeff and extra jewelery for this past weekend and it feels really nice to have money back in my account!

Off to read blogs and more research!

Tuesday Food




Breakfast!

Here is what I did- I took a 1/4 cup pumpkin, whisked with 1/2 cup egg whites, sprinkle cinnamon- Microwaved for 1.5 minutes ( not done)... Swished it around to half the bowl, then took the Quaker Simple Harvest, Honey Almond Instant Cereal packet (http://www.quakersimpleharvest.com/qsh_products/HotCereal/vanilla/index.cfm)
( delicious!) and mixed it with water ( you could do milk) and mixed it on the other side of the bowl. Microwaved for another 2 minutes + ( power on my microwave sucks so most people this would not take as long!) I topped it with a frozen banana and it thawed from the steam/heat of it. I added peanut butter too but you can't tell because of the colors! I added slices of a gala apple along the side to make a whole serving of fruit!


Lunch: I took a shot with all the products today for lunch below so you could see. I had a salmon burger, thawed then put it in my toaster oven for about 7 minutes ( these were a GREAT brand- i do NOT like trader joes brand- too rubbery- these were very much like salmon in the shape of a burger!), I put that on top of a flat-out light wrap ( sundried tomato basil) and topped with Tomato Pesto Goat Cheese.... Veggies on the side!

Dinner:
Whole Wheat Spaghetti, 99% lean ground turkey, Barilla Tomato Sauce ! Some cheese, spinach and cauliflower steamed... ( for me I enjoyed this- but it was a little bland)
I needed something quick and easy because I stayed after class for a prospective student information session to be videotaped for our Online Program Info on the website- I will post a link if they put me online! I was SO nervous! But as a thank you for doing it, I got a gift card to Whole Foods! How awesome is that!
